Microwave Veggie Pita Melt

Pita bread, also called "pocket bread", is a round Middle Eastern flatbread made of whole or white flour. Each pita is split horizontally, a pocket is formed, and a variety of ingredients are used for filling. Pita bread is either served with meals, as a dipper for appetizers, or eaten like a sandwich. Combine vegetables and cheese to make this satisfying veggie pita melt.
You'll need:
3 whole-wheat (6-inch) pita pocket breads l cup fresh mushrooms, sliced 1 medium zucchini, shredded (about 1-1/2 cups) l to 2 green onions, sliced l 1/2 cup sweet red pepper strips l 3/4 cup low-fat mozzarella or Monterey Jack cheese, shredded knife (ADULT ONLY) grater microwave safe platter microwave safe bowl paper towels
What to do:
- If possible, print out these directions. Read them through with your child before you begin.
- With your child, gather everything you'll need.
- Cut each pita bread in half; let your child open each half to form a pocket.
- Slice onions, red pepper, and mushrooms. Use the grater and show your child how to shred the zucchini.
- Invite him to combine mushrooms, zucchini, onions and red pepper in a microwave safe bowl.
- Microwave on high, uncovered, 3 minutes or until just tender, stirring once.
- Drain. Stir in shredded cheese.
- Help him divide filling among breads.
- Place filled pockets on paper-towel-lined platter; cover with paper towel.
- Microwave on high 2 to 3 minutes or until filling is heated and cheese starts to melt; rotating dish once.
- Makes 6 sandwiches.
