Muffins with a Surprise

Muffins fall into the quick bread category, or breads that are made quickly because the dough does not need time to rise. The agents of baking powder and baking soda'); ONMOUSEOUT=popUp(event,'ht') ONMOUSEOVER=popUp(event,'ht')>leavening agents of baking powder and baking soda are already in the dough mix. Muffins can be served with breakfast, lunch or dinner. Use a twelve-cup muffin tin to make these special surprise muffins.
You'll need:
1 cup whole wheat flour 1 cup quick-cooking oats 2 tsp. baking powder 1/2 tsp. cinnamon 1/4 cup brown sugar 1/2 cup oil 1 egg 1 cup milk 1/4 cup jam 2 bowls muffin tin (12 cups)
What to do:
- If possible, print out these directions. Read them through with your child before you begin.
- With your child, gather everything you'll need.

- Invite your child to mix all the dry ingredients except the brown sugar in one of the bowls.
- Let her combine the brown sugar, oil, egg, and milk in the second bowl. Mix until they are smooth.
- Add the brown sugar mixture to the dry ingredients and mix until moistened.
- Show your child how to grease a muffin tin.
- Let your child help you fill 12 greased muffin cups 1/4 full.
- Invite her to spoon 1 tsp. jam over the batter and fill each cup 3/4 full with remaining batter.
- Bake 15-10 minutes.
- Together, enjoy your surprise treat.
